Skinny Bread Pudding

For breakfast today, I was craving something sweet, but didn’t want pancakes or French toast, so I made this skinny bread pudding.This pudding can also be cooled to room temperature for a custard-like consistency or served cold. The recipe makes two servings and each serving is two weight watchers points each.

Ingredients

  • two slices of 45 calorie bread
  • two tablespoons of Greek yogurt
  • four ounces of vanilla premier protein shake
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1 tsp brown sugar
  • Cooking spray

Instructions

  1. cut two slices of bread into pieces, put them in a greased baking dish. In the blender, blend two tablespoons of Greek yogurt and four ounces of protein shake – I use vanilla and a banana. Once blended, add to the bread mixture, sprinkle with cinnamon and some brown sugar. Just a little pinch. Spray some avocado oil and place in the oven or air fryer. If you use the oven, I’d say at least 25 minutes at 375, and if you use the air fryer, 14 minutes at 375.
