Quinoa Breakfast Bowl with Cottage Cheese, Dried Cranberries & Pistachios

Ingredients:

1 cup cooked quinoa

¼ cup low-fat cottage cheese

2–3 tbsp dried cranberries

2–3 tbsp roasted pistachios

½ cup roasted butternut squash (optional: seasoned with cinnamon)

1 tsp honey or maple syrup (optional)

Instructions:

  1. In a bowl, layer the cooked quinoa as the base.
  2. Add roasted butternut squash on top.
  3. Spoon cottage cheese evenly over the bowl.
  4. Sprinkle dried cranberries and pistachios.
  5. Drizzle honey or maple syrup if desired.
  6. Mix lightly and enjoy warm or chilled.
