Ingredients:
1 cup cooked quinoa
¼ cup low-fat cottage cheese
2–3 tbsp dried cranberries
2–3 tbsp roasted pistachios
½ cup roasted butternut squash (optional: seasoned with cinnamon)
1 tsp honey or maple syrup (optional)
Instructions:
- In a bowl, layer the cooked quinoa as the base.
- Add roasted butternut squash on top.
- Spoon cottage cheese evenly over the bowl.
- Sprinkle dried cranberries and pistachios.
- Drizzle honey or maple syrup if desired.
- Mix lightly and enjoy warm or chilled.
