Pumpkin Pie Pancakes

This stack of delicious Pumpkin Pie Pancakes are the fluffiest, quickest, and the most delicious pumpkin pancakes ever!

Ingredients

  • 2 large egg whites
  • 1/2 cup kodiak buttermilk pancake mix combined with 1/3 cup Clean Simple Eats Pumpkin Pie protein powder or 2/3 cup self rising flour
  • 1/2 cup canned pumpkin
  • 1/4 cup water
  • 1 large egg or 4 Tbsp liquid egg
  • 1 Tbsp granulated sugar substitute  ( I use Lakanto Classic Monkfruit Sweetener) 
  • 1/2 tsp pumpkin spice
  • 1/2 tsp cinnamon
  • 1 tsp vanilla extract

Instructions

  1. In a large mixing bowl combine, 2 egg whites and using a hand mixer, beat until nice and foamy. 
  2. In a separate mixing bowl combine the remaining ingredients. Whisk until all ingredients are incorporated.
  3. Gently fold in egg whites. 
  4. Spray a non stick skillet with non stick cooking spray and heat skillet on medium high.
  5. Using a 1/4 measuring cup, scoop pancake batter onto prepared skillet, making 4 inch pancakes.
  6. Cook pancakes on medium high until little bubbles start to form at the top of the pancakes. About 2-4 minutes.
  7. Flip and cook for an additional 2-4 minutes or until lightly golden.
  8. Top with 4 Tbsp of fat free Reddi Whip and 3 Tbsp Mrs Butterworth’s sugar free syrup for 0 points, and sprinkle a little cinnamon over the top, if desired.

Makes 9 pancakes
