Pumpkin Cheesecake Mousse Recipe

Pumpkin cheesecake mousse… Guys!! If you love a yummy pumpkin dessert, you need to try this!! It is SO good, loaded with protein and worth the Only 2 points with the graham cracker and Cool Whip

Ingredients

  • 1/2 cup fat free cottage cheese
  • 1/2 cup pure pumpkin
  • 1 T. maple syrup sugar free
  • 1 ground up graham cracker square
  • 2 tablespoons fat free sugar free Cool whip
  • A couple shakes of each: nutmeg ground ginger, cinnamon and a very small shake of ground cloves. You could use pumpkin spice blend instead!

Instructions

  1. In a high speed mixer (I use my Kitchenaid food processor) blend together:
  2. 1/2 cup fat free cottage cheese
  3. 1/2 cup pure pumpkin
  4. 1 T. maple syrup
  5. A couple shakes of each: nutmeg, ground ginger, cinnamon and a very small shake of ground cloves. You could use pumpkin spice blend instead!
  6. Blend well until nice and smooth and creamy. Chill in refrigerator for at least 2 hours!
  7. Additional adds:
  8. 1 ground up graham cracker square
  9. 2 tablespoons fat free sugar free Cool whip
  10. I layered ours! Half of pumpkin mix, graham cracker, the rest of pumpkin mix and then topped with the Cool Whip!
