Personal Pizza pies with Soyrizo and Egg

These Personal Pizza pies with Soyrizo and Egg are delicious and each personal pie is so filling !!! 7 weight watchers points for each personal pie

Ingredients

  • 1 – 12 oz. Soyrizo I use El Burrow
  • 1 medium-ish red bell pepper
  • 3 green onions
  • 4 large eggs
  • 4 – premade pizza crust dough- Pillsbury Mini Pizza Crusts

Instructions

  1. Preheat oven 375 degrees, grease a large baking sheet. Flatten 4 pizza doughs into 6″ rounds or oblongs. Place on baking sheet. Bake 12-16 minutes (as per instructions on label) I did 13 minutes.
  2. While that is baking add diced bell peppers and onions to a heated 12″ oven safe skillet. Add soyrizo, break it up and mix. Fry until heated through on medium-low heat until the pizza crusts are done.
  3. Create 4 little divots in soyrizo and add an egg to each. Place in oven until eggs are cooked sunny side up or desired doneness.
