One pot taco soup

This One Pot Taco Soup is so scrumptious
packed with taco seasonings, onions, garlic, black beans, corn, crushed tomatoes, green chilies, and vegetable broth! makes six servings – each serving is 1 point with the toppings

Ingredients

  • 1/2 tsp ground black pepper
  • 1/2 medium onion diced
  • 3 garlic cloves minced
  • 1 28 oz. can crushed tomatoes
  • 1 4 oz. can green chilies
  • 2 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 15.5 oz. can of canned black beans, drained
  • 2 cups corn kernels frozen and thawed
  • 2 cups low-sodium vegetable broth
  • TOPPINGS Measurements for one bowl
  • 1/8 cup shredded fat free cheddar cheese-
  • 1 tablespoon Fat-free sour cream or nonfat plain Greek yogurt
  • 1 mission 25 calorie yellow corn tortilla
  • Freshly chopped cilantro leaves or scallions finely sliced

Instructions

  1. Spray a Dutch oven or large pot with nonstick cooking spray. Add onion, and garlic, and cook for 1 minute or until onions are tender. Then add the crushed tomatoes, green chilies, chili powder, garlic powder, onion powder, oregano, paprika, and cumin. Stir and let it simmer for 2 minutes.
  2. Add the beans, corn, and vegetable broth. Stir. Cover and let it simmer for 15 minutes. Remove lid.
  3. Season with more chili powder, salt, and pepper, if desired.
  4. Serve warm with your favorite toppings such as;toppings: just 1 weight watchers point per serving with these topping below per bowl
