These No box mix pumpkin pancakes are a fantastic fall breakfast. They’re light and fluffy with the wonderful essence of pumpkin pie. Three pancakes are 1 weight watchers point They feature ground cinnamon, pumpkin pie spice, canned pumpkin, and maple syrup for additional sweetness. There’s no fancy equipment required; just fold the wet and dry ingredients together to make the batter, then cook on a griddle or in a skillet until perfectly browned.
Ingredients
- Two eggs 0
- 1/2 Cup pumpkin 0
- 1/2 tsp vanilla extract 0
- 1 tbsp baking powder 1
- Sprinkle cinnamon 0
- 2 tbsp sugar free maple syrup 0
Instructions
- In a medium bowl, whisk together, baking soda, pumpkin pie spice, cinnamon and salt. In a large bowl, beat together, pumpkin, eggs. Add dry ingredients to wet ingredients; fold in just to combine.
- Coat a griddle or large skillet with cooking spray; heat over medium-high heat.
- Spoon batter into pan in batches using 1/4-cup batter for each pancake; cook until lightly browned, about 3 to 4 minutes per side. Remove pancakes to a tray in a warm oven; repeat with remaining ingredients (being careful not to spray cooking spray into an open flame). Yields 3 pancakes per serving.
