Mini Reese’s Peanut Butter Protein Waffles

These Mini Reese’s Peanut Butter Protein Waffles are perfect for a protein packed meal prep breakfast! These waffles add more protein to your traditional breakfast! They are packed with vitamins, minerals, enzymes, fiber, prebiotics, omegas, and of course, protein-that will keep you full for hours!

Cook Time: 15 minutes

Total Time: 25 minutes

Ingredients

  • 1 cup Clean Simple Eats Buttermilk or Vanilla pancake/waffle mix-or Buttermilk Kodiak Power Cakes protein waffle mix
  • 3 tsp unsweetened baking cocoa powder
  • 1 Tbsp peanut butter powder- I like to use Great Value Peanut Butter Powder

Wet Ingredients:

  • 1 large egg
  • ¾ cup water or unsweetened almond milk whole
  • 1 tsp pure vanilla extract

Optional Toppings:

  • Reese’s Peanut Butter, melted – 1 WW point per 1/2 Tbsp
  • Unwrapped mini Reese’s Peanut Butter cups, crumbled  – 1 WW point per mini cup
  • 2 Tbsp Mrs. Butterworth’s sugar free syrup – 0 WW points
  • Sugar free cool whip

Instructions

  1. Preheat your waffle iron and wait for it to heat up.
  2. Whisk all dry ingredients in a large mixing bow
  3. Whisk all wet ingredients in a smaller bowl.
  4. Pour wet ingredients into the dry mixture, and mix until just combined (DO NOT OVER MIX). The batter should be thick yet with a pourable consistency, so begin with ¾ cup water or unsweetened almond milk and add a little more if needed.
  5. Spray the waffle iron with non stick cooking spray.  Using a ¼ cup batter for each waffle. Cook waffle according to waffle iron instructions. (usually it takes roughly 2 minutes per waffle).
  6. Remove waffle from the waffle iron and repeat until all mini waffles are made. I recommend spraying the waffle iron with non stick cooking spray before adding batter for each mini waffle.
  7. Top with your favorite waffle toppings!

Makes 7 mini waffles

1 WW point for 1 waffle or 3 WW points for 2 mini waffles *does NOT including the optional toppings

  • 1 unwrapped mini Reese’s Peanut Butter cups, crumbled  – 1 WW point each

  • Sugar free cool whip

Notes

Can I freeze these waffles?

YES!! I usually make a double batch of the recipe or just freeze leftovers. Place cooled ones in a ziplock bag and freeze for up to 2 months. My favorite way to reheat them is to pop one or two in a toaster, until hot and crisp. Great for weekday mornings before heading out to school or work!
