Here’s a light and delicious Weight Watchers Lemon Yogurt Cake recipe that’s only 2 weight watchers points per slice! (Makes 12 Slices)
Ingredients
- 1 cup non-fat plain Greek yogurt
- 1/3 cup honey or sugar substitute
- 1/4 cup unsweetened applesauce
- 2 eggs
- 1 tsp vanilla extract
- Zest of 1 lemon
- 1/4 cup fresh lemon juice
- 1 cup self-rising flour
- 1/2 tsp baking powder
- Optional: sugar free Powdered sugar for dusting

Preheat your oven to 350°F (175°C). Lightly grease a 9-inch cake pan (i used a loaf pan) or line it with parchment paper.
In a bowl, whisk together the yogurt, honey, applesauce, eggs, vanilla, lemon zest, and lemon juice until smooth.
In another bowl, mix the flour and baking powder.
Gradually fold the dry ingredients into the wet ingredients until just combined (don’t overmix!).
Pour the batter into the prepared cake pan.
Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
Let the cake cool before dusting lightly with sugar free powdered sugar, if desired.
