Ice Cream Mango

Ingredients:

3 ripe mangoes, peeled and chopped
2 cups heavy whipping cream, cold
1 tsp vanilla extract
1 can (14 oz) sweetened condensed milk
Juice of 1/2 lime (optional, enhances mango flavor)
Pinch of salt

Directions:

Puree the mangoes in a blender until smooth. Measure about 1½ cups of mango puree.

In a large bowl, combine mango puree, sweetened condensed milk, vanilla extract, lime juice (if using), and a pinch of salt. Mix well.

In a separate bowl, whip the cold heavy cream with a hand mixer until stiff peaks form.

Gently fold the mango mixture into the whipped cream using a spatula until well combined and smooth.

Pour the mixture into a loaf pan or airtight container. Smooth the top with a spoon.

Cover and freeze for at least 6 hours, or overnight, until firm.

Scoop and enjoy your homemade mango ice cream!
