Ingredients
- 2 large raw sweet potatoes, peeled and cubed
- 1 lb. 96% lean ground beef
- 1 Tbsp taco seasoning
- 1 1/2 cup fat free cottage cheese or low fat Good Culture 2% cottage cheese
- 90 grams avocado, diced
- 1 1/2 Tbsp Mikes hot honey
Instructions
- In a large skillet brown ground beef over medium-high heat. Cook meat until brown and add taco seasoning with 2 tbsp of water. Stir and cook until well combined.
- Divide the ground beef and sweet potatoes into 3 equal portions. (I like to weigh the cooked ground beef and sweet potatoes separately and then divide that weight for each one by three)
- Add 1/2 cup cottage cheese and 30 grams avocado to each serving bowl.
Drizzle a 1/2 tablespoon of hot honey over each serving bowl. Enjoy! - Store leftovers separately in airtight containers in the fridge up to 4 days. Reheat the taco beef and sweet potatoes before adding cottage cheese and avocado!
