Ingredients

  • 2 cups frozen strawberries
  • 2 large bananas
  • 1/2 cup coconut milk unsweetened
  • 4 fresh dates pitted and soaked in water for 15 minutes
  • 1 vanilla bean pod

Instructions

  • Split vanilla bean pod lengthwise and then, scrape seeds. Add scraped seeds to a bowl of a high-speed blender or food processor.
  • Add the remaining ingredients and simply blend until completely smooth.
  • Pour the mixture into a freezer-safe container; freeze your ice cream for at least 3 hours or overnight.
  • Let your ice cream thaw at room temperature for 10 to 20 minutes before serving. Enjoy!
