Homemade Oat Bread

I usually make the zero point homemade oat bread with cottage cheese, but I wondered if I could make it with Greek yogurt instead.

Ingredients

  • 1 cup old-fashioned oats blended into flour or left whole for texture
  • 1 cup non-fat plain Greek yogurt
  • 1 large egg
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt optional
  • Optional: herbs garlic powder, onion powder, or Everything Bagel seasoning for flavor

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Prep oats:
  3. If you want a smoother bread, blend oats into flour in a blender or food processor.
  4. If you like texture, leave them whole or do a mix of both.
  5. Mix ingredients:
  6. In a bowl, combine oats, baking powder, baking soda, and salt. Stir in the egg and Greek yogurt until everything is well incorporated.
  7. Let it rest for 5–10 minutes to let the oats absorb moisture. Batter will thicken slightly.
  8. Shape & bake:
  9. Pour into a greased or lined loaf pan (or shape into mini rounds on a baking sheet for rolls).
  10. Bake for 25–30 minutes or until golden brown and a toothpick comes out clean.
  11. Cool before slicing. It will firm up as it cools.
