I usually make the zero point homemade oat bread with cottage cheese, but I wondered if I could make it with Greek yogurt instead.
Ingredients
- 1 cup old-fashioned oats blended into flour or left whole for texture
- 1 cup non-fat plain Greek yogurt
- 1 large egg
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt optional
- Optional: herbs garlic powder, onion powder, or Everything Bagel seasoning for flavor
Instructions
- Preheat oven to 350°F (175°C).
- Prep oats:
- If you want a smoother bread, blend oats into flour in a blender or food processor.
- If you like texture, leave them whole or do a mix of both.
- Mix ingredients:
- In a bowl, combine oats, baking powder, baking soda, and salt. Stir in the egg and Greek yogurt until everything is well incorporated.
- Let it rest for 5–10 minutes to let the oats absorb moisture. Batter will thicken slightly.
- Shape & bake:
- Pour into a greased or lined loaf pan (or shape into mini rounds on a baking sheet for rolls).
- Bake for 25–30 minutes or until golden brown and a toothpick comes out clean.
- Cool before slicing. It will firm up as it cools.
