Ingredients
- •6 eggs 0 smart points on blue
- •container of garden veggies Trader Joe’s Garden vegetable hash 1 smart points on blue
- •1/4 cup or 2 oz. of lite mozz cheese Trader Joe’s Lite low-moisture part skim mozzarella cheese 2 smart points on blue
- •2 tbsp Trader Joe’s Green goddess salad dressing 1 smart point on blue
Instructions
- •sauté veggies
- •meanwhile, in bowl, scramble eggs and add dressing. Mix well
- •pour eggs over veggies
- •cover with cheese
- •put lid over pan and let cook until eggs set (mine took 10 minutes)
- •garnish with cracked pepper and parsley
