This Greek Potato Salad was so flavorful and healthy, no mayo.I was moaning while I was eating it, It’s that good! 1 weight watchers point per serving. Makes 5 serving.
Ingredients
- For the salad:
- 1 lb baby potatoes cut in half
- Salt
- 1/4 cup Kalamata olives cut in half
- 1/4 cup scallions chopped
- 1/4 cup red onion chopped
- 2 tbsp fresh dill finely chopped
- 2 tbsp fresh parsley finely chopped
- For the dressing:
- 2 tbsp red wine vinegar
- 1 tsp Dijon or spicy brown mustard
- 1 or 2 garlic cloves
- 1/2 tsp dried oregano or italian seasoning
- Salt and pepper to taste
Instructions
- Boil the potatoes in salted water until tender. Meanwhile, mix the dressing and chop the vegetables and herbs. Drain Potatoes and set aside until they cool slightly. Cut into smaller pieces of desired. Pour half the dressing over the warm potatoes and mix well. Add the rest of the ingredients, including the other half of the dressing. Mix well and let stand for 15-20 minutes before serving.
- No need to refrigerate since there is no mayo. Although if you’re going to make it ahead of time I would put it in the refrigerator and take it out about an hour before serving.
