These Greek Chicken Meatballs with tzatziki sauce are exactly what you need in your life. They are crispy on the outside and juicy in the middle!
Ingredients
- 1 lb. 99% lean ground chicken
- 1/3 cup plain or Italian breadcrumbs
- 1/4 cup crumbled fat free feta cheese or parmigiano-reggiano
- 1 large egg
- lemon zest from 1/2 lemon
- 2 cloves garlic, minced
- ½ tsp salt
- ½ tsp dried oregano
- 1/2 tsp dried dill
- ½ tsp onion powder
- 1 tsp dried parsley or 2 Tbsp fresh, finely chopped
Instructions
- In a large mixing bowl, combine the ground chicken, breadcrumbs, egg, parmesan or feta cheese cheese, lemon zest, garlic, salt, onion powder, oregano, dill, and fresh parsley.
- Mix all together using your hands.
- Using your hands, gently form into golf ball-sized meatballs-about 1 Tbsp.
- Preheat the oven to 400 degrees.
- Line a baking sheet with parchment paper, or spray a baking dish with nonstick cooking spray.
- Place meatball on prepared baking sheet. Spray the tops of the meatballs with cooking spray.
- Bake meatballs for 18-20 minutes or until they are lightly browned.
- In a large mixing bowl, combine the ground chicken, breadcrumbs, egg, parmesan or fat free feta cheese, lemon zest, garlic, salt, onion powder, oregano, dill, and fresh parsley.
- Mix all together using your hands.
- Using your hands, gently form into golf ball-sized meatballs-about 1 Tbsp.
- Place them on a prepared air fryer tray or basket and spray with cooking spray.
- Air fry at 375 degrees for 15 minutes, or until they are lightly browned.
- Meanwhile, prepare tzatziki Sauce: In small bowl, stir together all ingredients.
- Garnish meatballs with fresh parsley and serve with tzatziki sauce.
