INGREDIENTS
- 3 pounds red potatoes, halved
- 2 tablespoons olive oil
- 5 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/3 cup freshly grated Parmesan
- Kosher salt and freshly ground black pepper, to taste
- 2 tablespoons unsalted butter
- 2 tablespoons chopped parsley leaves
INSTRUCTIONS
- Preheat your oven to 400 degrees F.
- Get out your baking sheet and cover it with nonstick spray or lightly oil the bottom in an even layer
- In a large mixing bowl, add in your halved potatoes
- Next, you are going to add olive oil, garlic, thyme, oregano, basil, and parmesan to the bowl
Season with salt and fresh ground black pepper to your taste preference - Toss all ingredients together and coat completely
- Layer seasoned potatoes in an even layer across your prepared baking sheet
Start off by placing the potatoes skin side up so the potato gets a little crispy - Place baking sheet into the oven and bake for 25-30 minutes
Flip halfway through to ensure even browning around the entire potato halves - Melt the butter either on the stovetop or microwave for approximately one minute
- Pour on top of potatoes, garnish with parsley if desired
