Easy One Pan Chicken and Broccoli Stir Fry

This Easy One Pan Chicken and Broccoli Stir Fry is healthier classic dish of sautéed chicken tossed with fresh broccoli florets in a light sweet and savory sauce. This Easy Chicken and Broccoli recipe is a low-carb chicken stir fry that makes for a quick and healthy meal

Ingredients

  • 2 tsp olive oil 
  • 1 lb. boneless skinless chicken breasts, cut into bite-sized pieces
  • salt and pepper, to taste 
  • 3 cups fresh broccoli small florets, stems discarded
  • 1 tsp toasted sesame oil 
  • Green onions and toasted sesame seeds, for optional garnish

Sauce Ingredients:

  • 2/3 cup water
  • 1/3 cup reduced-sodium soy sauce
  • 2 Tbsp cornstarch
  • 3 Tbsp rice vinegar
  • 2 Tbsp Choczero honey or regular honey
  • 1 tsp ground ginger
  • 1 Tbsp garlic, minced

Instructions

  1. Heat olive oil in a large skillet or cast iron skillet over medium-high heat. 
  2. Add chicken and season with salt and pepper. Cook for about 5 minutes, stirring occasionally.
  3. Meanwhile, whisk all sauce ingredients together in a small bowl until combined
  4. Once the chicken is browned, add broccoli, and stir to combine. 
  5. Continue cooking for an additional 3 minutes, until the broccoli is bright green.
  6. Stir in the sauce, and cook until the sauce has thickened, about 2 minutes. 
  7. Remove from heat and stir in the sesame oil until combined.
  8. Garnish with green onions and toasted sesame seeds, if desired. 
  9. Store leftovers in an air tight container and refrigerate for up to 5 days.
