These Easy Low Carb Breakfast Flautas are made using low carb tortillas and loaded with eggs, cottage cheese ( for added creaminess and protein), crumbled bacon, and cheese! These make for a hearty, savory breakfast – and ready in less than 30 minutes!
Prep Time: 5 minutes
Cook Time: 18 minutes
Total Time: 28 minutes
Ingredients
- 6 small low carb tortillas- I like to use the Mission Carb Balance Fajita tortillas
- 8 slices precooked bacon, cooked till crispy, crumbled
- 4 large eggs
- 3 Tbsp low fat cottage cheese
- Salt and pepper, to taste
- 1/2 cup ( 2 oz.) reduced fat Mexican cheddar cheese, shredded
- 1 large egg, beaten
Instructions
I like to use 4 large eggs mixed with cottage cheese. If you aren’t a fan of that combination, free to add two additional egg whites as a substitute for the cottage cheese.
You’ll start by cooking the eggs. The eggs can be cooked on the stove or in the microwave. I have included directions for both ways.
Cooking eggs on the stove: Whisk eggs, cottage cheese, and salt and pepper in a medium size mixing bowl. Pour into a hot skillet pan that has been sprayed with nonstick cooking spray, stirring until scrambled.
Cooking eggs in the microwave: Whisk eggs and cottage cheese in medium microwavable bowl. Microwave uncovered on High 1 1/2 minutes. Stir cooked outer edges to center. Microwave 1 to 2 minutes longer or until eggs are almost set but still moist. Season with salt and pepper.
- Divide scrambled egg into 6 servings. Top each tortilla with scrambled eggs, bacon crumbles and cheese. Roll up tortilla and place on ungreased cookie sheet.
- Brush the tops of the taquitos with the beaten egg using a pastry brush. This gives the taquitos a golden-brown color and makes them crispy.
- Bake at 350 degrees for 18 to 20 minutes or until golden brown. Cook at 450 degrees in air fryer for 6-8 minutes.
- Serve warm with your favorite toppings such as: salsa, sour cream, or guacamole!
- Store leftovers in an ziplock bag or container in the fridge for up to 5 days or freeze for up to 3 months. Reheat in air fryer or microwave.
