his Easy Homemade Pretzels recipe makes 8 pretzels ( with two bonus pretzel bites) pretzel is Four points each on all Weight Watchers Plans

Ingredients

  • 2 cups of Bread Flour
  • 3/4 cup of unsweetened applesauce
  • 1 tsp of instant rapid rise yeast.
  • 1 egg
  • pinch of salt (toss the salt in away from the yeast yeast doesn’t like direct contact with salt.

Instructions

  1. Combine in a stand mixer with dough hook above ingredients.
  2. Mix on low until dough forms then keep on mixing for another 4-7 minutes (kneading), I like to help the mixer along by removing the dough from the hook, putting it back into the bowl a few times during the kneading process. Do this until the inside of the bowl is clean of loose flour, you should end up with a nice tacky, not sticky ball of dough.
  3. Remove the dough ball, spray the inside of mixing bowl with Pam, return dough to bowl, flip over (so it’s oiled on both sides) cover and keep in a warm area for 1 1/2-2 hrs. to proof.
  4. Heat oven to 450 degrees and bring 10 cups of water to rolling boil with 2/3 cups of baking soda.
  5. Turn proofed dough onto oil sprayed surface and divide into 8 equal portions, roll out each portion into a 24” rope, make a U-shape , holding each end, cross them over each other twice and press onto bottom of U to form pretzel, place on parchment lined ,oil sprayed, cookie sheet and repeat with the rest of the dough.
  6. One at a time place pretzels in the boiling water for 30 seconds then remove and place back on the cookie sheet, repeat with remaining pretzels. Bake 10 minutes, they should be a beautiful dark golden brown, remove from oven and sprinkle with salt.
