Easy FOUR Bean Salad

this Easy FOUR Bean Salad makes two large servings- each serving is two weight watchers points!

Ingredients

  • 1 can Garbanzos rinsed and drained
  • 1/2 can cannelloni beans rinsed and drained
  • 1/2 can red kidney beans rinsed and drained
  • 1/2 can black beans
  • 1/2 can Pinto beans rinsed and drained
  • 1 can quartered Artichoke hearts drained
  • 6 sliced Kalamata olives
  • Red onion slices thin to taste
  • Diced cucumber to taste
  • 1/2 small container qtrd cherry tomatoes
  • Baby spinach..washed and pat dry..I julienned the spinach
  • 2/3 cup fat free feta cheese
  • Dressing:
  • 1 Cup Red Wine Vinegar
  • 1 tsp Italian seasoning
  • 2 cloves garlic minced
  • Small amount of red pepper flakes if desired
  • Kosher or sea salt
  • Black pepper

Instructions

  1. Combine beans with tomato cucumber, olives, onions olives and spinach.
  2. In a small mixer( I used my bullet) mix all dressing ingredients
  3. Toss salad with dressing and chill for 1 hour
