Ingredients
- 10 oz Diced Tomatoes & Green Chilies canned
- 20 oz Simply Potatoes Shredded Hash Browns
- 1 cup Bisquick Pancake and Baking Mix Heart Smart
- 1 egg
- 2 cups low-fat milk
- 1 cup 100% liquid egg whites
- 16 ounces diced ham
- 1 cup shredded cheese made with 2% milk
Instructions
- Preheat the oven to 400 degrees F.
- Spray a 9×13 pan with cooking spray.
- Spread fresh or thawed hash browns in pan and sprinkle with salt and pepper to your liking.
- In a bowl combine ham and the drained can of diced tomatoes and green chilies. Mix this in with the hash browns in pan.
- Sprinkle the cheese over this ham, tomato and hash brown mixture.
- In the empty bowl combine milk, Bisquick, egg and egg white liquid and whisk together.
- Pour this liquid over the top of the hash brown mixture.
- Bake, uncovered for 40 minutes or until knife inserted in the center comes out clean.
