Easy Baked Queso Chicken

Ingredients

  • 4 ( 4 oz.) skinless, boneless chicken breasts-pounded into thin pieces. 
  • 2 tsp chili powder
  • 1 tsp onion powder
  • 1 tsp garlic powders 
  • 1 tsp cumin
  • ¼ tsp salt 
  • 1 (4 oz.) can mild green chiles
  • 1 cup Con Queso sauce, I like use Tostitos con queso dip 
  • 1 roma tomato, chopped
  • 2 Tbsp fresh cilantro or parsley , chopped, for garnish

Instructions

  1. Preheat oven to 375 degrees.  Spray a cast iron skillet or baking dish with nonstick cooking spray.
  2. Season the chicken breasts with chili powder, onion powder, garlic powder, cumin, and salt. 
  3. Place chicken breasts in the bottom of the prepared baking dish or skillet. 
  4. Top chicken breasts canned green chiles.
  5. Spread queso sauce evenly over each chicken breast.
  6. Bake for 30 minutes or until the chicken is cooked through and no longer pink in the center.
  7. Top with chopped tomatoes and fresh cilantro or parsley. Serve warm.
