Ingredients

  • 16 ounces sweet potatoes-about three small sweet potatoes. It’s best to weigh them after you peel and cut them.
  • 2 tsp cornstarch
  • 2 tsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp Kosher salt
  • Fresh or dried parsley, optional garnish

Instructions

Oven Directions:

  1. Preheat the oven to 425 degrees.
  2. Line a baking sheet with nonstick aluminum foil or parchment paper. If using foil, spray with non stick cooking spray.
  3. Cut the sweet potatoes into thin slices-about 1/4″ x 3″. Making around 40.
  4. In a large mixing bowl combine a handful ice cubes and water. Soak the slices in ice cold water for 30 minutes. Tip: Soaking the peeled sweet potatoes in ice cold water prevents them from sticking together and makes them extra crispy!!
  5. Drain water.
  6. Pat the sweet potatoes dry with a paper towel and then place in a zip top bag with cornstarch and garlic powder. Shake until evenly coated.
  7. Place sweet potato slices in a single layer on the prepared baking sheet. Drizzle with olive oil and sprinkle with salt.
  8. Bake for 15 minutes. Flip them over and bake for another 15 minutes, or until crispy.
  9. Remove fries from oven. Serve with your favorite fry sauce, or THIS Easy Skinny Ranch Dressing.
  10. Garnish with fresh parsley, if desired.

Notes

The thinner the slices the faster they cook. If your slices are thicker, they will need to cook longer. I like to peel my sweet potatoes. However, you don’t have to peel them.
