Cottage Cheese Queso Dip

This Cottage Cheese Queso Dip is a must-make recipe! This Queso Dip is made with cottage cheese, cheese, taco seasoning, and Ro-tel, it is ready in under 5 minutes!

Ingredients

  • 1 cup low fat cottage cheese- I like to use 2% low fat cottage cheese.
  • 1 Tbsp low sodium taco seasoning.
  • 1/4 cup reduced fat cheese, shredded. You can use Mexican, cheddar, or pepper jack
  • 1/4 cup Rotel diced roasted tomatoes with green chilies, drained.

Instructions

  1. Add the cottage cheese and taco seasoning to a blender and blend on high until smooth.
  2. Pour the blended cottage cheese into a microwave safe bowl and add cheese and Rotel.
  3. Microwave for 30 second intervals for one minute or until the cheese is melted.
  4. Remove from the microwave and stir until well combined. 
  5. Serve warm with veggies, protein chips, or tortilla chips.
  6. Store leftovers in an air tight container in the fridge for up to 3 days. Reheat in microwave.

Makes 4 ( 1/4 cup) servings

  • 2 WW Points® per serving if using 1%or 2 % low fat cottage cheese
  • 1 WW Point® per serving if using fat fat cottage cheese
