Cottage Cheese Chocolate Pudding

I love cottage cheese, but the fat free Wegman’s brand tasted weird to me. I doctored it up with a few ingredients and it tasted really good ! I have some aerosol whipped cream that’s zero points that really makes it a nice dessert. Zero point chocolate pudding? Yes, please!

Ingredients

  • Fat free cottage cheese
  • 2 cup s
  • Monk fruit sweetener with erythritol
  • ⅓ cup s
  • Unsweetened cocoa powder
  • 2⅔ Tbsp
  • Vanilla extract
  • 1 tsp

Instructions

  1. In a food processor, process the cottage cheese on high speed until smooth, 1 to 2 minutes, stopping to scrape the sides of the bowl as necessary. Add the monk fruit sweetener, cocoa powder, and vanilla; process until well combined, 30 seconds to 1 minute. Spoon into bowls and serve.
  2. Serving size: ½ cup

This smooth, creamy, sweet treat couldn’t be simpler to make. You just process cottage cheese until smooth, then add sweetener, cocoa powder, and vanilla extract—no cooking required, and no chilling necessary either. You can make it ahead, too, if you’d like; spoon into bowls and refrigerate for up to three days.
