Ingredients
- 2 large eggs
- 1 Tbsp cottage cheese-optional
- 1 cup Great Value hash browns- southern style or shredded
- 3 oz. frozen lightly breaded chicken nuggets or frozen grilled chicken tenders- I like to use Just Bare chicken nuggets
- 1 Tbsp reduced fat sharp cheddar cheese, shredded or 2 Tbsp reduced fat three cheese blended, shredded
Instructions
- Line the air fryer basket or baking sheet with parchment paper. Set air fryer to 400 degrees or oven to 450 degrees.
- Place the hash browns and chicken nuggets or grilled chicken strips in the air fryer or prepared baking sheet.
- Spray the hash browns and chicken with olive oil cooking spray.
- Cook for 10-12 minutes or until golden brown (toss them half way through cooking) or cook in the oven for 15-18 minutes or until golden brown.
- Whisk eggs and cottage cheese in a bowl.
- Spray a frying pan with non stick cooking spray and pour in egg mixture into prepared frying pan.
- Cook eggs until their reach your desired consistency.
- Add hash browns, eggs, and chicken nuggets or grilled chicken tenders into a bowl and top with cheese.
