This Weight Watchers Chicken Stuffing Casserole recipe makes for a tasty and simple dinner idea, It’s easy to make and packed with simple ingredients
Ingredients
- 2 lbs. skinless, boneless chicken breast diced into bite-size pieces.
- 1 (6 ounces) box Stove Top stuffing mix
- 1 can healthy request cream of chicken condensed soup (10.5 oz)
- 1/2 cup fat-free sour cream or you can use nonfat plain Greek yogurt
- 1 1/2 cups low-sodium chicken broth
- Salt and pepper to taste
- 2 cups frozen mixed vegetables, thawed
Instructions
- Preheat the oven to 375 degrees.
- Using non-stick cooking spray, Spray a 9X13 baking pan.
- Then cut the chicken into bite-sized pieces.
- Place the chicken pieces on the bottom of the 9X13 pan in an even manner.
- Season chicken pieces with salt and pepper.
- In a separate mixing bowl, mix condensed soup, nonfat Greek yogurt or sour cream, and mixed vegetables until combined.
- Pour the sauce over the chicken pieces until covered.
- Evenly pour Stove Top stuffing mix on top of the sauce.
- Pour 1 1/3 cups chicken broth on top of the stuffing mix, and make sure that all of the stuffing is moistened by the broth.
- Cover the baking dish with foil and bake for about 30 minutes.
- Bake uncovered for 15 more minutes.
- Garnish with fresh thyme or parsley, if desired and serve warm.
- You can store leftovers in an airtight container and keep them in the fridge for up to 4 days.
