Ingredients:

Shredded cooked chicken

Tortillas

Enchilada sauce (red)

Shredded cheese (mozzarella or Mexican blend)

Green onions (sliced)

Sautéed greens (e.g., spinach, kale)

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Fill tortillas with shredded chicken, roll them, and place in a baking dish.
  3. Pour enchilada sauce over the top and sprinkle with cheese.
  4. Bake until cheese is melted and bubbly (about 20 minutes).
  5. Garnish with green onions.
  6. Serve with sautéed greens on the side.
