blueberry protein cakes

Makes 9 cakes and each is two weight watchers points!  Not only are these cakes easy to make, but they are packed with protein. The cakes ends up with a wonderfully moist and custardy texture. Store leftovers in an airtight container in the fridge for up to five days.

Ingredients

  • 1 1/2 Cups Kodiak mix
  • 1 tsp baking powder
  • 1/2 Cup unsweetened applesauce.
  • 1/2 cup water.
  • 1/4 Cup sweetener
  • 1 egg
  • 1 cup Blueberries
  • cooking spray

Instructions

  1. combine egg, water, water, applesauce
  2. & sweetener. Blend together with the Kodiak mix & baking powder and  fold in blueberries
  3. Bake in the oven 350° 15-20 min
