Black Bean & Quinoa Bowl with Guacamole and Veggies

I made this protein it was so good and easy

Ingredients:

Cooked quinoa

Black beans (canned or cooked)

Sautéed or grilled zucchini & onions

Shredded cabbage or coleslaw mix

Guacamole or avocado dressing

Diced tomatoes & onions (pico de gallo)

Lime juice

Olive oil

Salt & pepper

Instructions:

1. Cook quinoa according to instructions and let cool slightly.

2. In a pan, sauté zucchini and onions with olive oil until soft.

3. Warm black beans if needed.

4. In a bowl, layer quinoa, beans, sautéed veggies, and cabbage.

5. Top with pico de gallo and drizzle with guacamole or avocado dressing.

6. Season with salt, pepper, and lime juice to taste.
