Black Bean Queso Dip

Servings: 8
WW Points: ~3.5–4 points per serving (can be lowered with some tweaks!)

Ingredients:

  • 2 cans black beans, drained (~6 points total)
  • ½ cup sour cream (full-fat, ~6 points; swap with light sour cream or Greek yogurt to save points)
  • 1 tsp chili powder (0 points)
  • 1 tsp cumin (0 points)
  • 1 tbsp fresh lime juice (0 points)
  • 12 oz Queso Mama (cheese sauce), ~16–18 points (choose light or less amount to reduce points)
  • Garnish: green onions, diced tomatoes (0 points)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Drain the black beans and blend them in a food processor with sour cream, chili powder, cumin, and lime juice until smooth.
  3. Spread the bean mixture evenly in the bottom of a 9×9 inch baking dish.
  4. Heat the Queso Mama in the microwave for 60 seconds, stir, then pour it evenly over the bean layer.
  5. Bake for 15 minutes until bubbly and heated through.
  6. Remove from oven and add green onions and diced tomatoes on top if you like.
  7. Serve warm with tortilla chips or spoon over your favorite chicken, rice, or veggies!

💡 WW Tips:

  • Use light sour cream or plain nonfat Greek yogurt to cut down points by 2–3 per serving.
  • Swap Queso Mama for a lighter cheese sauce or use less to save more points.
  • Add extra veggies like diced tomatoes or bell peppers inside the dip for more volume and flavor, without extra points.
  • Perfect for game day or any snack craving — creamy, cheesy, and full of flavor without blowing your points!
