These Weight Watchers 1-point black bean brownies are the perfect guilt-free treat. Pour yourself a cup of coffee and feel free to dip a corner in!
Ingredients
- 1 15 ounce can black beans
- 3 eggs
- 3 tablespoons applesauce
- 1/2 cup cocoa
- substitute Apple Sause
- 1/2 teaspoon baking powder
- 1 pinch salt
- 1 teaspoon vanilla
- 3/4 cup stevia/monkfruit
- optional • 1/2 cup lilys milk chocolate chips
- cooking spray
Instructions
- Preheat oven to 350 degrees.
- Spray 8×8 square baking dish.
- Combine the black beans, eggs, apple sauce cocoa powder, baking powder, salt, vanilla, and sugar in a blender. Blend until smooth. Pour the mixture into the prepared baking dish. Sprinkle the chocolate chips over the mixture or mix into the batter.
- Bake in a preheated oven until the top is dry and edges start to pull away from the sides of the pan, about 30 minutes.
- I frost them by putting the remaining bag chocolate chips on top of the brownies when they come out of the oven. When melted, I spread them around.
Notes: Try refried beans, but make sure there is no added seasonings: onion or garlic powder. Use black beans for the traditional recipe with the richest brown color, or opt for pinto beans for a slightly lighter shade and chewier texture.
