- Green bell pepper

- Red bell pepper

- Firm block of tofu

- Taco seasoning mix

- Shredded fat free cheddar cheese

- 1 medium Tomato

- Cilantro
- 3 Tbsp finely chopped

- 3 Tbsp minced
- 1 can of black beans
- 1 can of corn
- Table salt
- ¼ tsp
Instructions
- Preheat the oven to 350°F.
- Heat a large nonstick skillet over medium-high for 4 minutes. Spread the tofu out in the skillet and let it cook without touching for 2 minutes.
- Add beans, corn, tomatoes, onions, Season with the taco seasoning (or salt, pepper, garlic powder, onion powder, chili powder, and cumin). cook for an additional 3 to 4 minutes and then set it aside.
- Core the peppers and cut them into chip-size pieces.
- Place the peppers in a single layer on a large baking sheet and top with the tofu mixture. top with cheese. Bake until the cheese is melted, about 5 to 7 minutes.
