Baked Potato Soup

this is delicious if you are soup lover try this and I hope you will be satisfied.

  1. Lightened-Up Baked Potato Soup (6 WW Points)
  • 4 cups potatoes, diced
  • 1 small onion, chopped
  • 2 cups low-sodium chicken broth
  • 1 cup unsweetened almond milk (or skim milk)
  • 1/2 cup fat-free Greek yogurt
  • 1/2 cup reduced-fat shredded cheddar cheese
  • 4 slices of turkey bacon, crumbled
  • 2 tbsp chives, chopped
  • Salt & pepper to taste
    Instructions:
  1. Boil potatoes and onions in chicken broth until tender.
  2. Blend half of the soup for a creamier texture, then return to the pot.
  3. Stir in almond milk, Greek yogurt, salt, and pepper. Simmer for 5 minutes.
  4. Top with cheese, turkey bacon, and chives before serving.
