- Lightened-Up Baked Potato Soup (6 WW Points)
- 4 cups potatoes, diced
- 1 small onion, chopped
- 2 cups low-sodium chicken broth
- 1 cup unsweetened almond milk (or skim milk)
- 1/2 cup fat-free Greek yogurt
- 1/2 cup reduced-fat shredded cheddar cheese
- 4 slices of turkey bacon, crumbled
- 2 tbsp chives, chopped
- Salt & pepper to taste
Instructions:
- Boil potatoes and onions in chicken broth until tender.
- Blend half of the soup for a creamier texture, then return to the pot.
- Stir in almond milk, Greek yogurt, salt, and pepper. Simmer for 5 minutes.
- Top with cheese, turkey bacon, and chives before serving.
