baked banana oatmeal

This banana blueberry Oatmeal bake recipe is super easy and perfect for meal prep! three weight watchers points for the entire recipe!

Ingredients

  • 2 ripe bananas
  • 1 cup rolled oats
  • 1 cup fat free milk or a milk alternative
  • 1 tsp baking powder
  • 1 tsp cinnamon optional
  • 1 tsp vanilla extract optional
  • 1 egg
  • 1/2 cup Blueberries

Instructions

  1. Preheat the Oven:
  2. Preheat your air fryer or oven to 180°C (356°F).
  3. Mash Bananas:
  4. In a mixing bowl, mash the ripe bananas until smooth. (Leave a few banana slices to add to the top.
  5. Combine Ingredients:
  6. Add the rolled oats, milk, baking powder, cinnamon, egg and vanilla extract to the mashed bananas. Stir until well combined.
  7. Prepare for Baking:
  8. Pour the mixture into a baking dish or air fryer-safe pan lined with parchment paper. Add banana slices and blueberries to the top
  9. Bake:
  10. Place the dish in the preheated air fryer or oven and bake for 20-25 minutes, or until the top is set and golden.
  11. Serve:
  12. Let it cool slightly before slicing. Enjoy it warm or at room temperature!
