This apple cranberry coleslaw is a refreshing and colorful side dish that combines crisp cabbage, sweet apples, and tart cranberries with a tangy dressing. It’s perfect for fall gatherings, holiday tables, or as a refreshing addition to any meal.

Ingredients:

4 cups shredded green cabbage

1 cup shredded red cabbage

1 large apple, julienned (Honeycrisp or Granny Smith work well)

1/2 cup dried cranberries

1/4 cup chopped pecans (optional)

2 green onions, thinly sliced

For the Dressing:

1/4 cup mayonnaise

1/4 cup Greek yogurt (or sour cream)

1 tablespoon apple cider vinegar

1 tablespoon honey or maple syrup

Salt and pepper, to taste

Directions:

In a large bowl, combine the shredded green cabbage, red cabbage, julienned apple, dried cranberries, pecans (if using), and green onions.

In a separate small bowl, whisk together the mayonnaise, Greek yogurt, apple cider vinegar, honey, salt, and pepper until smooth.

Pour the dressing over the cabbage mixture and toss until everything is well coated.

Refrigerate for at least 30 minutes before serving to allow flavors to meld. Serve chilled.
